Baked Coconut Donuts

Ingredients
Coconut Donuts
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 2 tablespoons shredded coconut, optional
  • 3/4 cup milk
  • 2 eggs, beaten
  • 2 tablespoons butter, melted
  • 1/4 cup vegetable oil
  • 1 teaspoon coconut emulsion or extract

Coconut Icing
  • 1 1/2 cups powdered sugar
  • 3 tablespoons milk
  • 1 teaspoon coconut emulsion or extract

Topping
  • Shredded coconut

Instructions
  • Preheat the oven to 325 degrees and spray a donut pan with nonstick spray.  Set aside.
  • In a large mixing bowl, combine flour, baking powder, shredded coconut (optional), and sugar. Mix until combined.  In a separate bowl, combine milk, eggs, butter, vegetable oil, and coconut emulsion.  Mix the wet ingredients until well combined before adding in the dry ingredients. Stir until just combined.
