Vegan Banana Bread Muffins
Moist and delicious vegan banana bread muffins. Delicious served either warm from the oven or cold, with lashings of vegan butter or just plain! Have the best smelling house on the block when you make these muffins!
INGREDIENTS
2 cups (250g) All Purpose Flour
1 cup (200g) Brown Sugar
3 tsp Baking Powder
1/4 tsp Salt
1 tsp Cinnamon
1 Flax Egg
3 Medium Ripe Bananas (10.5oz/300g)
1/2 cup (120ml) Soy Milk (or other non-dairy milk)
3 Tbsp Coconut Oil
1 cup (100g) Walnuts (semi-crushed)
