Vegan Crepes Recipe

Vegan Crepes - these crepes are so solidly good. I didn't need to add the water at the end of the recipe since I only let it rest for an hour. I made sweet crepes, so I added about 1.5 tsp sugar. I cooked these in omelet pans over medium to medium-high heat. Crispy dreams... I filled them with vegan chocolate mousse and topped them strawberries and raspberries



Ingredients
1 cup all-purpose flour
1/4 tsp. salt
1 1/2 cups unflavored soy or almond milk
3 tbsp. vegetable oil, any neutral-flavored oil suitable for baking, such as canola, plus extra for the pan
1 tbsp. maple syrup, optional
1 tsp. vanilla extract, optional
up to 1/3 cup water

Instructions
Place all ingredients except water into a medium mixing bowl and whisk together until completely smooth.
