Sheet Pan Breakfast Potatoes

Spice up breakfast with these Sheet Pan Breakfast Potatoes. Cooked with bell peppers, onions and serrano peppers in vegan butter until crisped to perfection!



Ingredients
1.5 lbs red potatoes cut in bite-sized pieces
1/2 green bell pepper diced
1/4 red onion diced
2 cloves garlic diced
1 serrano pepper sliced thin (optional)
1/2 tsp. paprika
1/4 - 1/2 tsp. cayenne
1/4 tsp. black pepper
1 tbsp. vegan butter melted
1 tbsp. olive oil
salt to taste
Cilantro optional
