Cauliflower Gnocchi

Cauliflower Gnocchi with Bacon and Spinach in a creamy sauce. A quick weeknight dinner made with frozen Trader Joe's Cauliflower Gnocchi that's ready in less than 20 minutes. Gluten free and Whole30 compliant


INGREDIENTS
Gnocchi:
1 12-ounce bag Trader Joe’s Cauliflower Gnocchi
1/4 cup water
2 tablespoons ghee
Sauce:
1 tablespoon ghee
2 shallots, diced
2 cloves garlic, minced
3/4 cup full-fat coconut milk
1 teaspoon dried oregano
1 teaspoon grass-fed gelatin dissolved in 2 tablespoons warm water
2 cups chopped spinach
3 strips sugar-free bacon, cooked and crumbled
Fresh basil for garnish

INSTRUCTIONS
In a non-stick skillet, add gnocchi and ¼ cup of water, cover and cook on medium heat until water is evaporated and it’s heated through (about 6-8 minutes). Add 2 tablespoons of ghee to skillet and saute until browned (about 3 minutes longer). Remove from pan and set aside.
Add 1 tablespoon of ghee to pan, add minced shallot and garlic and cook for 1-2 minutes.
